Improve the logo of a chocolate company

I'm working for a new chocolate making company, and we're in the process of establishing our company's logo. We have validated the direction bellow, and now we're looking to improve on it with the good eye of a talented designer.
I had the idea of trying a contest to see how that goes! It's obviously a test, so hopefully it goes well and we end up having what we want. I have several other visual assets in the pipeline, so the winning designer would most likely be contacted again for additional work.

What is locked: The dual logo shape
logo shape 1. small 160x160 px square logo, to be used as avatar, sticker on chocolate package and on documents. For this version of the logo, there is little room to change the disposition, shape and size.
The designer should focus on improving the font, drawing, and color.
Logo shape 2. Large 800-1100x160 px rectangle logo, to be use as the main logo on the package. For this version of the logo, there is more room to play with the proportions. The rectangle could be of anywhere between 800 and 1100 in width. The height of 160 px is locked, to make for an easier reading/comparison.
We are quite happy with current direction of this rectangle, but would be open to improved ratio.
What is not locked (and should be the focus of the designer): The font used/color/printing block background drawing
A. Printing background drawing: Must be changed. We like the 'medieval printing press blocks' look and feel. However we think the current 'heart, or spade, shaped' pattern could definitely be changed for something more creative, more chocolate inspired, more tropical (we work from a tropical island).
B. Font used: Could be changed. This the best we found to illustrate the direction, and we are fairly happy with it. However we're not graphic designer, and we expect a professional designer to be able to come up with something even better. There are only 5 letters (C, A, O, T, E) to be created if the designer opts for this creative avenue, not the entire alphabet.
C. Color: Could be changed. We did 4 boards, one grayscale, one main color (old red) and inverted versions for both. We expect the same quantity of assets (4 boards for each of these situations), but we haven't lock the main color (and its inverted version). Grayscale should look equally good.
D. Readability: Must be improved. The density of the background pattern and current font design impedes a quick reading of the letters. The designer should improve the overall readability of the logo.
