Packet sniffer - Com hooking - IM message interception

Hi,
I am looking for a sniffer, I would like to intercept pop3/smtp activity, ICQ/AOL MSN, Yahoo messenger, and the project should write its messages to a simple text file.
For example: when the user send pop3 email using his outlook the email he send will be written to a text file, if the user gets an email this as well will be written to the file.
If a conversation is taking place in an ICQ window I expect to see that very same conversation as a block in the text files.
This is only phase one of my project, I am looking for a coder that can offer his services for phase 2 as well without the need to bid again (not mandatory of course)
