My name is Eduardo and I post graduation student at Sao Paulo University. Plotting points as you posted is a very simple task. After this job, the next step is create polygons that aggregate similar soil surveyed. I verified the site using Google Earth and the surface is vary flat and, probably, your measuments reflect the river bed movement along the time. This characteristc difficults extrapolate the results to outside your area showed at file grid_coordinates.png. I have one question. Will you classify the soil using only the granulometry characteristic? I bid the most simple and economic job with two task: plotting of points and ArcMap shape file polygon. After, if you want, I can draw a granulometry map at 50 cm with all requirements. But it'll be another job and you'll need another layers like rivers, road, county divisions; probably they are disponible. I don't know your project, I don't want bid a job you don't need. I can make this work for you. In what form would you like the final map? Do you want something static or a map that can be interacted w/ and needs to be hosted?
