Hey! Happy to help, it just so happens that I did my thesis work on an AC-DC-AC converter, mainly simulations and control system design. It consisted of a Boost PFC cascaded into a Full-Bridge Single-Phase inverter. It is really not trivial to simulate control systems in SPICE, but it is indeed possible. I've many many simulations and with my PID, analytically compensated achieved THDv of 0.5% on resistive loads up to 12W. This should be good enough for your purposes and we could also test it against non linear loads to see if it is worth changing to a more robust control scheme. Right now I've a single Voltage loop, but we could definitely go for an Current-Control double loop design with real time current regulation and a secondary Vrms regulation loop. I'll be happy to accompany you through this process and even guide the PCB design when we reach that stage.
