I have been working mostly on Linux for development of router boards, IOT boards and many processing boards throughout my career and have delivered the work to my clients satisfying their requirements. I have developed hardware as well as firmware for the devices using SoC and whole SoM. usually I prefer using SoM in hardware development and using openwrt or yocto as firmware. i can suggest you a very powerful and cheap SoM that can handle all your IoT requirements and sensors and communicate with the sensors using zigbee,bluetooth or 6LoWPAN technologies.
