Hi, I can use Apache Tika which is a content analysis toolkit to extract text and metadata from the documents uploaded by your users and give you the total word count. Apache Tika is a Java based toolkit, it requires Java SDK to run on the server. If your website is hosted on a VPN hosting service then it would become easy for me to setup the toolkit on your server and build you a PHP based solution which behind the scenes uses Apache Tika to analyze content in the uploaded document and then give you the proper word count. But if on the other hand your website is hosted on a shared hosting service then I'd have to employ several different techniques and quirks to deliver you the proper word count.
