We previously had a website that was being hosted on Bluehost, but have since moved to the Shopify platform. We would like to move the two domains that we own (currently still on Bluehost) to Google instead, as our experience with Bluehost has not been great. One domain has a 301 redirect for the other, and the main domain is currently pointed at our new Shopify store. We need to maintain the proper DNS properties and ensure that our current email (through Google GSuite) is still working.

We currently run a Virtual Private Server on BlueHost that hosts multiple websites running Wordpress. Google PageSpeed Insights indicate a performance issue with the server response time, which currently varies between 2 to 5 seconds (sometime much longer). We're looking for someone who knows Linux / Apache / MySQL / Wordpress very well and has experience managing these servers to help us identify the performance bottleneck and reduce response time to under 200ms. We're also open to suggestions on how to best configure the server, install updates etc. all to ensure that it is running at optimum efficiency.
