Linux Server Error, disk mount and soft Raid backup

We have a Linux server running Ubuntu 14, we were updating it to Ubuntu 16 and the disk failed.
The server is hosted with OVH and is now in rescue mode.
OVH will replace the disk, but NOT transfer the data
We need to create a backup of the date, either through mounting disk or accessing soft RAID.
Get the host to replace the disk
Copy data over
There are also on MYSQL 5.7 errors that need fixing.
