Moving a Greek e107 script based portal to another server

We need a freelancer to transfer 2 e107 based sites, hosted under cpanel from one of our server based in UK to another server in USA. The freelancer must make a full backup from one server and restore the full site to the other server. The freelancer that will handle the job must be e107 familiar because both sites run with e107 .617 CMS. Our main problem is that we cannot backup and restore correctly the mysql databases that have wrong encoding. Although they work correctly and within the site the data displays perfectly, we cannot back the data up and restore it. The greek characters are ruined. Also the freelancer must explain the process of solving this mysql problem.
